3-Ingredient Apple Oat Cookies

🍎Who doesn’t love a great cookie!? This one is healthy AND delicious … and is super simple to make!

You can add dried fruit or nuts. You also can use plain instant oats in this recipe, it might take a few minutes less to bake and the texture will be less oat-ier.

3 Ingredient Apple-Oat Cookies (makes 8 cookies)

●  4 oz (150 g) applesauce sweetened

●  1 cup (80 g) rolled oats

●  ½ tsp cinnamon

●  Sprinkle of sea salt

Preheat oven to 350°F/177ºC. Line a cookie sheet with parchment paper.

Add all 3 ingredients to a mixing bowl and mix thoroughly.

Using a 2 Tbsp scoop, scoop out the dough and place it on the baking sheet, spacing the cookie about 2 inches (5 cm) apart. Press the dough down with the bottom of a glass.

Bake the cookies for 15-16 minutes. They will be done when the edges start to brown.

Remove from the oven and let cool. Enjoy!

(These will keep for several days in the refrigerator.)

🎄Enjoy these healthier buñuelos made with whole wheat flour tortillas as a delightful treat during the holiday season or any time you're craving a lighter version!

Here's a recipe for healthier Buñuelos using premade whole wheat flour tortillas - enjoy!

Ingredients:

6 whole wheat flour tortillas (medium size)
1/4 cup coconut oil or olive oil
1/4 cup honey or maple syrup (you can opt to use sugar instead)
1 teaspoon ground cinnamon

Instructions:

Preheat the oven to 350°F (175°C).
Place the whole wheat flour tortillas on a baking sheet.
In a small saucepan, heat the coconut oil over low heat until it becomes liquid. Remove from heat.
Using a pastry brush, lightly brush each tortilla with the melted coconut oil on both sides.
Arrange the oiled tortillas on the baking sheet, making sure they don't overlap.
Bake in the preheated oven for about 8-10 minutes or until the tortillas are golden and crisp. Keep an eye on them to prevent burning.
While the buñuelos are baking, mix the ground cinnamon with honey or maple syrup in a small bowl.
Once the buñuelos are done, remove them from the oven and immediately drizzle the cinnamon-honey mixture over each one.
Allow the buñuelos to cool slightly before serving.

Exercises aren't just about the body, let's give o Exercises aren't just about the body, let's give our minds a workout too! 🧠✨ Try this fun mindfulness exercise today and treat your mind to a little self-care. Because a healthy mind is a happy mind! 

🌈 Mindful Color Hunt:

Choose a Color: Pick a color you'd like to focus on. It could be a color associated with calmness, like blue or green, or something vibrant for energy, like red or yellow.

Set a Timer: Decide on a duration for your color hunt. It could be 5, 10, or 15 minutes, depending on the time you have.

Go on a Hunt: Start your timer and explore your surroundings with the chosen color in mind. Look for objects, nature, or anything that matches your selected color.

Observe Mindfully: As you find items, observe them mindfully. Pay attention to details, textures, and shades. Take a moment to appreciate the beauty of each discovery.

Reflect: After the timer goes off, take a few minutes to reflect on your experience. How did it feel to focus on a specific color? Did it bring a sense of calm or excitement?

This simple yet engaging mindfulness exercise helps bring attention to the present moment while adding a playful element. It's a fun way to practice mindfulness in your everyday surroundings.

Today I woke up and felt bleh...here's what I do w Today I woke up and felt bleh...here's what I do when I'm stuck in a rut. 

Create a “wish list” - what is it that I wish I was doing or how do I wish my life looked like.  I like to pretend that I have a magic genie, what would I ask for?

Find one thing on that list that I can take action on. 

If it’s something bigger like “travel the world” then I break it up into lots of smaller steps and start working on that wish. It could be as small as starting a travel Pinterest board or starting a list of countries to visit. 

If it’s a smaller wish then I take bigger steps and make that my goal for the next few days or weeks (it depends on the size of the wish)

Now that I have a bit of pep on my step, I use this momentum to keep me going. 

Motivation wanes but momentum keeps you going. This may be completely unrelated to my ‘wish’ but suddenly I am not thinking about the rut I was just in, now I am cleaning the house, or going to work with a new sense of purpose.

Sometimes we feel stagnant and bleh when we have nothing to look towards to, so putting a new carrot in front of us every now and then may be just the thing we need to get us un-blehed and out of the rut.

I had a hard time eating cauliflower because I jus I had a hard time eating cauliflower because I just don't like most veggies. But I've been playing around with several recipes for several veggies and now I am eating more veggies than before. 

Here is the 15-Minute Cauliflower Fried Rice recipe that has me eating cauliflower like a good girl! 😆

👩‍🍳This is a lower-carb version of fried rice – without the rice.

If you don’t want to “rice” the cauliflower yourself, pick up a bag of frozen cauliflower rice at the grocery store.

15-Minute Cauliflower Fried Rice (makes 4 servings)

●  1 head cauliflower
●  1 bag frozen mixed vegetables
●  2 Tbsp olive oil
●  3 large eggs
●  ¼ cup coconut aminos
●  Optional toppings: lemon quarters, cilantro, parsley, or green onions

Wash and dry the cauliflower and chop it into florets.

Place the florets in your food processor and pulse until a rice-like consistency is formed. Depending on the size of your processor, you’ll probably have to do this in batches.

Heat olive oil in a large skillet over medium heat. When it’s hot, add the cauliflower and vegetables. Stirring frequently, saute for about 10 minutes.

While it’s cooking, whisk the three eggs together in a small bowl.

When the mixture reaches the desired tenderness, pour in the eggs and cook, stirring, until it is combined and the eggs are cooked through. Stir in the coconut aminos.

Remove from the heat and add optional toppings. Serve and enjoy!

I'm obsessed with these carrot chips. 🥕Sweet a I'm obsessed with these carrot chips.

🥕Sweet and caramelized, these carrot chips make a healthy side dish or snack!

They are SOOO simple and delicious that you may want to add them into your regular rotation! Here is the recipe 👇

Baked Carrot Chips (makes 4 servings)

●  4 carrots, washed
●  1 Tbsp avocado oil
●  ¼ tsp sea salt

In your oven, place one rack on the highest level and the other on the bottom rack. Preheat oven to 350ºF/175ºC. Prepare two baking sheets by lining them with parchment paper. 

While your oven is heating, using a mandolin or vegetable peeler, peel the carrot to create long strips.

Toss the carrot strips in the oil and then sprinkle on the salt. Spread the strips in a single layer on the baking sheets.

Place one baking sheet on the oven’s top rack and the other on the bottom rack and let bake for 7 minutes. Switch the racks and bake for another 6-7 minutes, until the carrots are crisp.

Remove from the oven and allow to cool for a few minutes (until they are safe to handle) before serving. 

You can also throw these into your air fryer!

Try not to eat them all at once :-)

👩‍🍳This salmon recipe makes a fast and eas 👩‍🍳This salmon recipe makes a fast and easy weeknight meal. Just whisk together the marinade, let the fish soak up all the deliciousness, and bake!

You also can cook this on the grill at the same temp. Tastes great … and it’s super healthy.

5-Ingredient Easy Baked Salmon (4 servings)

●  2 lb (900 g) salmon, skin on
●  2 Tbsp coconut aminos
●  1½ Tbsp Dijon mustard
●  1 large clove of garlic, minced
●  3 Tbsp olive oil

Place the salmon skin-side-down on a cutting board and cut into 4 portions. Place in a baking dish and set aside.

In a small bowl, whisk together the coconut aminos, Dijon mustard, garlic, and oil. Spread about ⅔ of the mixture over the salmon and set the rest aside for later.

Let the salmon marinate for about 15 minutes at room temperature. While it’s marinating, preheat the oven to 400ºF/200ºC.  Line a sheet pan with parchment paper.

When the salmon is ready to go in the oven, place skin-side-down on the baking sheet. Bake for 12-15 minutes, until the salmon is cooked through.

Remove from the oven and brush the remaining marinade mixture over the salmon.

Serve and enjoy!
